Nine years, four kitchens, one standard.

I trained at the Institute of Culinary Education in Manhattan and went straight to the line at Hearth. Since then I've cooked in a James Beard award-winning dining room, run a brigade at a MICHELIN-selected bistro, and directed the kitchen of a Beard-semifinalist bakery. The through-line is technique, sourcing, and consistency — the parts of the work guests never see.
